Damiano Ciolli – Cirsium

Grapes: 100% Cesanese di Affile

Farming: Biodynamic

Appearance: Ruby red

Tasting Notes: Red fruits and spices, pepper, cherry and blackcurrant. Light in color, medium bodied, great drinkability.

Vinification: Grapes are carefully selected , and any imperfect berry is discarded before they are loaded into the crusher. Cirsium is fermented in a stainless steel tank at temperature controlled within 25 °C to preserve the varietal aromas of Cesanese. Maceration lasts for about 15 days. Not filtered neither clarified. No sulphites added.

Aged: Silene ages in concrete vats for about one year and after bottling it rests in our cellar for further 6 months.

Damiano Ciolli – Cirsium – Top of Damiano Ciolli’s selection; it comes from a single vineyard of 100% Cesanese di Affile planted in 1953 by Damiano’s grandfather.
